The creation of the Le Brun Servenay vintage cuvées is the result of a slow research process, a strict selection and subtle blending from the best harvests to devise remarkable Champagnes where the uniqueness of the terroir, the elegance of the robe, the tiny bubbles and the lightness of the wine mark them out as outstanding.
The personal choice to opt out from malolactic fermentation gives the Champagne its distinctive freshness and delicacy.
In its unremitting quest for quality the Le Brun Servenay House has invested for years in the latest equipment to make the best in the wine-making process. |

The stainless steel vats located on the Mancy premises, some kilometres away from our Avize cellars, give harvest wines a mineral touch until the bottling process.
The vineyard area stretching over three Grand Cru villages as well as the surrounding hills adds up to 17 acres where the oldest vines are 80 years old.
The constant search for perfection can only be achieved through sustainable development in harmony with nature and terroirs.

Responsible farming applied to tending the vineyard and the soils reflects the Le Brun Severnay House’s endeavour to respect the environment, preserve the genuineness of the Champagne country landscapes and guarantee a rigorous selection of old vines through a low yield approach.
The ageing in our chalk cellars - over 25 years - for the great vintage wines, the traditional hand “remuage” (riddling) according to the "méthode champenoise" going back to the 17th century partake in the success and worldwide recognition of the Le Brun Servenay House Champagnes.

Our recent joint effort (as of 2014) with Philippe Jamesse, Head Sommelier of renown who works with other prestigious Champagne Houses enables us to produce finer Champagne wines and create new Cuvées thanks to a new vision and modern approach while retaining the uniqueness, the style and expression of the terroir specific to the Le Brun Servenay House which make its wines so particular.
